Confetti Dip

This is my go to dish for a party. Instead of a bean dip or queso this is a great way to eat healthy and not know it!

The base for this dip is lime juice, cilantro, garlic and dijon mustard.

Squeeze the juice of two limes into bowl. Then add 3 cloves of garlice, I use my garlic press so the garlic is very small. Put in a squirt of dijon mustard (2 Tbsp) and chop as much cilantro as your heart desires. Mix.

Add one can of black beans, drained. 1 cup frozen peas, 1 cup frozen corn and chop up some red onion. Make the peices about the same size as the peas.

Stir it up, cover and let sit in fridge for a while so flavors can meld. Before serving chop up some tomatoes and toss them in.



The lime, garlic, cilantro, mustard base also makes a delicious chicken taco. Instead of adding the veggies, add cooked cubed chicken stir and serve in a crunchy taco shell!
